Sourdough Discard Apple Fritters

The season for apple picking is coming, and this is the perfect easy fritter recipe to use up all those apples!

In a bowl toss together:

2 green apples- chopped

Half a lemon, squeezed 

1/4 cup white sugar

2 t cinnamon 

1/4 t cardamom

Set aside. 


In separate bowl add:

1 1/2 AP cups flour

1 teaspoons baking powder

1 teaspoons baking soda

1/2 t salt

Whisk together. 


Make a well and add:

1/2 cup sourdough discard

1/2 t vanilla 

2 eggs

1/4 cup milk

1/4 cup apple cider 

Combine wet and dry ingredients together but don’t over mix- just incorporate.

Fold in apple mixture. Set aside.


Heat your oil- a pot, deep frying pan, or Dutch oven will work for this. I use a frying thermometer (linked here https://amzn.to/4epg7RA) and make sure my oil is on medium/low heat and reaches 340-350 F. This makes it easy to keep any eye on the temperature as I fry- adjust heat according to temperature. I used the brand Carrington Organic Coconut Oil for this process (linked here https://amzn.to/3XTI39w)- it left no residual flavor of coconut. I used 1 quart of frying oil in my pot. To save oil for later use, allow to cool and strain bits out of it. Transfer to a glass jar and save for later. 


I used the fry and bake method as not to burn my donuts, so preheat your oven to 350 F. When oil is ready, place donuts in oil. Use a 1/4 cup measure and try to spread batter out as you spoon it into hot oil. Fry 1 minute and flip. Fry another minute (I use chopsticks to flip). Transfer with a slotted spoon to cooling rack lined with paper towels to absorb excess oil (set this up before hand). Give them a few minutes to cool- then remove paper towels and transfer to oven for 10 minutes to bake at 350 F. (I kept them on the cooling rack). When done baking allow to cool and make your glaze. 


Glaze: 

2 cups confectioners sugar

1/4 cup milk

1/4 cup butter

1/2 t vanilla 

1/2 t cinnamon 


Warm in saucepan on low till all your ingredients are incorporated and smooth. Coat each fritter thoroughly with icing and transfer back to cooling rack to allow icing to set for about 10 minutes. Enjoy warm!
