Sourdough Pie Crust
260 g AP flour
1 teaspoon sea salt
1 1/2 teaspoon sugar
226 g (2 sticks) frozen grated butter, unsalted
3/4 cup cold discard
2 T half and half
Combine dry ingredients. Add in butter (frozen, then grated right before adding to recipe), and mix until crumbly mixture forms. Add in discard and work dough a minute. Add half and half. Form ball, cut in half and flatten into discs. Wrap. Refrigerate over night.
Pie filling:
4 T unsalted butter
4 Granny Smith apples, peeled and cubed
2 T lemon juice
1/2 teaspoon cinnamon
1/2 cup brown sugar organic
1/8 t cardamom ( pinch)
Peel, slice, and chop apple finely. In a bowl, coat apples with lemon juice, sugar, and spices. In a medium sauce, melt butter on medium then add apples. Cook till apples come to low boil- cover and simmer 8 minutes. Strain apples over a bowl in a sieve, then add juices back to pan. Simmer juice on medium heat for another 5-8 minutes and add back to apples. Mix well and chill.
Brown Butter Caramel Cinnamon Icing:
In a small pot brown 1/2 cup (1 stick) unsalted butter on low. Remove from heat and stir in 1 cup brown sugar- whisk till smooth. Add 1/4 cup half and half and 2 T cream - Bring to a low simmer. Remove from heat and stir in 1 1/2 cups confectioners sugar- whisk till smooth. Add 1 teaspoon vanilla, 1/2 teaspoon cinnamon, and 1/4 teaspoon cardamom. With egg beater, blend till silky. Set aside to cool.
Roll out pie dough into 1/4 in thickness on well floured surface. Transfer rolled out dough to cookie sheet that is lined with silicon mat or parchment. Cut out 8 6in rounds. Roll out left over dough again to 1/4 in thickness, and this time cut into 1 in strips. Use additional pie dough if needed. Scoop 2 Tablespoons of apple mixture into center of cookies, then layer 4 strips of pie dough over the top and crisscross. Trim and crimp edges. Best 1 egg yolk and 1 Tablespoon cream and brush over tops.
Bake at 350 for 30-40 mins. Allow to cool and drizzle with Carmel Cinnamon icing. (If icing is too stiff warm on low heat till reaches desired consistency to drizzle). Enjoy!
