Sourdough Carmel Apple Fritter Muffins

Make apple filling:

4 T unsalted butter

4 Granny Smith apples, peeled and cubed

2 T lemon juice

1/2 teaspoon cinnamon 

1/2 cup brown sugar organic

1/8 t cardamom ( pinch)


Peel, slice, and chop apple finely. In a bowl, coat apples with lemon juice, sugar, and spices. In a medium sauce, melt butter on medium then add apples.  Cook till apples come to low boil- cover and simmer 8 minutes. Strain apples over a bowl in a sieve, then add juices back to pan. Simmer juice on medium heat for another 5-8 minutes and add back to apples. Mix well and chill.


In a small bowl mix:

1/3 cup brown sugar and 1 teaspoon cinnamon- combine and set aside.


In a large bowl cream together on high :

1/2 cup butter softened, unsalted

1/2 cup white sugar


Add in 1 egg, 1/8 cup honey, 2 teaspoons vanilla, and 1/2 cup sourdough discard. Beat together on high for 2 minutes or well combined. 


Combine:

2 cups ap flour

1 teaspoon baking soda

2 1/2 teaspoons baking powder

1/2 t salt

Add to batter. Mix until thoroughly combined. Whisk in 1 cup milk. 


Fold in 1 cup caramel chips (I like Trader Joe’s Sea Salt Carmel Chips). Set batter aside. Important to allow it to rest 15 minutes to allow baking powder to start activity. 


Streusel topping:

4 T unsalted butter, melted

1/2 brown sugar

1/2 cup flour 

Combine all ingredients till crumbly mixture forms. Set aside.


Preheat oven to 350 F. Spray with coconut oil and line a muffin tin with parchment. 

Scoop 2 Tablespoons batter into cup, add 1 Tablespoon apple filling. Sprinkle with cinnamon sugar mixture, and add 2 Tablespoons more of batter on top. Swirl with toothpick well. Add crumble topping on top and more apples if desired. Bake for 40-45 minutes. 


While baking make icing- 


Vanilla drizzle:

1/2 cup powdered sugar

2 T milk 

1/2 t vanilla

Combine with beaters for 1 minute.


Transfer to icing bag and cut off tip. Once muffins are cooled completely add on icing. Enjoy!
